Ingredients
  • 12 oz broccoli florets riced
  • 1 egg large
  • 1 egg white large
  • 1/2 cup green onions finely chopped
  • 2/3 cup cheddar cheese grated
  • 1/2 cup breadcrumbs seasoned
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric
  • sea salt to taste
  • pepper to taste
  • Parchment paper

  • 12 oz broccoli florets riced

  • 1/2 cup green onions finely chopped
  • 2/3 cup cheddar cheese grated
  • 1/2 cup breadcrumbs seasoned
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric
  • sea salt to taste

Instructions
  1. Place several broccoli florets in bowl of food processor. Process until evenly chopped but not completely pulverized. Remove broccoli rice to a large bowl and continue processing florets in batches until all florets are riced.
  2. Place riced broccoli in a glass bowl. Microwave for 3-4 minutes to soften.
  3. Preheat oven to 400°F. Line a cookie sheet with parchment paper.
  4. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.
  5. Using a cookie scoop, scoop mixture into medium size balls and place on cookie sheet. Or spoon heaping tablespoons of mixture in your hands and roll into medium size ball . Place on the cookie sheet and bake for 16-18 minutes, turning halfway through cooking until golden.
