I’m pretty obsessed with healthy salads. I love them, and I’m rather proud of my Kale & Brussels Sprout Salad recipe. This one is made with lemon, olive oil, Dijon mustard, garlic and pepper. The acidic dressing actually helps break down the kale and sprouts. After a while, the tough veggies become tender, so you wouldn’t have to cook them. Top it off with walnuts. This salad doesn’t have a lot of components, but it’s amazingly good. It’s bright, bold, and packed with flavors.
