Quinoa with Roasted Vegetables
Quinoa with roasted vegetables is a family favorite as a side dish for dinner and a mom favorite for a filling lunch. Colorful and packed with nutrients and protein, this dish can’t go wrong.
I roasted some of our favorite vegetables like colorful carrots, zucchini, red onion, and bell peppers along with whole cloves of garlic until they became soft and flavorful. Roasted vegetables combined with Bob’s Red Mill Tri-Color Quinoa cooked in vegetable or chicken broth for added flavor and nutrients. Topped with a simple vinaigrette dressing.
