Sweet Potato Hummus

  • 1pound sweet potatoespeeled and cut into 1-inch pieces
  • 1can chickpeasdrained and rinsed, 19.5 ounces
  • 1/4cup tahini
  • 1 fresh lemonjuiced
  • 2tablespoons olive oil
  • 2teaspoons cumin
  • 1clove garlicminced
  • sea saltto taste
  • black pepperto taste
  • pita wedgesor veggies like broccoli and bell pepper
  1. Place a steamer basket into a large pot. Fill with water, just below the basket; bring to a boil.
  2. Add sweet potatoes to hot water; cover, reduce heat and simmer until done, about 10 to 12 minutes. Potatoes should be tender
  3. Place the sweet potatoes into a blender or food processor Add the chickpeas, tahini, lemon juice, oil, cumin and garlic to the blender. Puree for 1 minute. Add a little water if mixture is too thick.
  4. Season with salt and pepper, to taste
  5. Allow hummus to cool. Place in an airtight container in the refrigerator Serve at room temperature or cold with pita wedges and veggies.
