Vegetables with Quinoa “Fried Rice”
As you know I like to make a large batch of quinoa each Sunday to have on hand throughout the week. Sprinkled on salads, as a side dish or added to vegetables, quinoa is a staple in our home. This recipe is a simple way to use cooked quinoa to create a quick, easy, 10-minute veggie “fried-rice”. Perfect as a side for dinner or a tasty lunch.

Ingredients
- 2 gloves garlic minced
- 3 cups quinoa cooked and chilled
- 1 bag frozen veggies any variety, 16oz
- 2 eggs
- 3 tablespoons tamari or soy sauce
- 1/2 teaspoon ginger ground
